Prehistoric Beginnings – Gelatin as Glue

The oldest discovered traces of collagen glue usage date back over 8,000 years. In the Nahal Hemar cave, located on a cliff near the Dead Sea in Israel, researchers found material initially mistaken for asphalt. Chemical analysis revealed, however, that the mysterious black substance covering baskets, fabrics, and tools was actually collagen – the protein precursor of gelatin.
Fascinatingly, Neolithic inhabitants not only extracted this substance from animal hides, tendons, and cartilage but also enriched it with plant additives, giving it the appropriate consistency.

In 1845, American industrialist Peter Cooper, owner of a factory in New York, patented a product called "Portable Gelatin" – the first dessert gelatin powder requiring only the addition of hot water. Cooper experimented with gelatins in his factory, which processed animal waste into glues and other products. His patent described a transparent jelly that could be poured into molds of any shape.
Though the idea was innovative, it remained in the shadows for half a century – lack of a proper advertising campaign meant the product didn't gain popularity, and after Cooper's patent expired, it seemed destined for oblivion.
Everything changed in 1895 when Pearl B. Wait, a cough syrup producer from Le Roy, New York, bought the patent from Cooper's heirs. Wait added fruit flavors to the gelatin-sugar mixture – lemon, orange, strawberry, and raspberry. His wife, May David Wait, gave the product the name "Jell-O."
Initially, this venture also didn't bring profits. Wait sold the brand to Francis Woodward for just $450. It was Woodward who conducted a massive advertising campaign under the slogan "America's Most Favourite Dessert," printing fifteen million recipe booklets intended to reach nearly every American household. The strategy worked – Jell-O became an icon of 20th-century American cuisine.
Photography and New Industrial Applications
In the 1860s, gelatin found a completely new application – in photography. Gelatin emulsion, containing light-sensitive silver salts, simplified and accelerated the photo development process. By the end of the 19th century, ready-made photographic plates covered with gelatin emulsion began to be mass-produced, making photography more accessible to a wider audience.
The turn of the 19th and 20th centuries was a time when gelatin in the form of flakes, blocks, and powders was already mass-produced for the needs of the food, pharmaceutical, and photographic industries. Processing plants operated throughout Europe and the United States, transforming slaughterhouse waste into valuable raw material.

In the 20th century, gelatin reached its peak popularity. In the 1920s in Germany, Hans Riegel founded the company Haribo (an acronym for Hans Riegel, Bonn), and in 1922 created a bear-shaped gummy – "Goldbär" (golden bear). Initially, gummies were produced from gum arabic, but over time, gelatin became their primary ingredient – all thanks to its elasticity and ability to take any shape and flavor.
During the Great Depression of the 1930s and World War II, gelatin played a significant role in Americans' diet. It was an inexpensive and universal meal base, allowing housewives to create diverse dishes from limited ingredients. The introduction of mandatory rationing in 1942 by the Office of Price Administration further increased gelatin's importance as an economical ingredient.

The Jell-O brand briefly tested savory versions of its products, though they didn't enjoy lasting popularity. In 1964, the advertising slogan "There's always room for Jell-O" was introduced, promoting gelatin as a light dessert after a hearty meal.

Today, gelatin is a key ingredient in many industrial sectors. Global demand for this raw material amounts to approximately 620,000 tons annually. The food industry consumes about 59% of production, pharmaceutical – 31%, and the remaining 10% finds application in photography, cosmetics, and other technical fields.
Modern gelatin production is a complex process subject to rigorous quality standards, including ISO, HACCP, and GMP standards. Manufacturers use strictly monitored collagen hydrolysis processes, ensuring the safety and purity of the final product.
